Exchange rates don't have to be complicated. In fact, there's only one you need to worry about: the mid-market rate.
Banks and other providers set their own rates, so there is no universal rate. But in reality, there is a "real" rate. It's called the mid-market rate.
Generally speaking, bankers are willing to pay a certain price for a currency, and are willing to sell it for a certain price. The midpoint between these prices is the mid-market rate. Since this is the rate that the market naturally sets, it is the "truest" and fairest rate.
